Rolo Cookies

Tuesday, February 25, 2014

I LOVE these cookies! They are really the only kind of cookie I can make. No joke. I was so glad my Aunt Nanny ( who I love dearly) gave me the recipe! With that being said I would like to take credit for how amazing these are but I can't! Hers always turn out better than mine. But I haven't had anyone complain about them! I have made them so many times for so many different occasions and have always gotten compliments! I posted a picture of me making these last sunday after church and I was asked to share the recipe on my blog! So here it is for all of you who would like to try ROLO COOKIES!

1\2 C butter soft
1\2 C cream cheese ( I like to use light)
1 C sugar
1 C brown sugar
2 eggs
2 1\4 C flour
1 tsp baking soda
3\4 C coco
30 Rolos ( you can use the mini ones if you would like)
Powdered sugar to roll the dough in

Pre heat oven to 350. . Beat butter and cream cheese until creamy. Gradually a sugars and beat well. Add eggs and beat well. Add vanilla and beat will again.
Sprinkle baking soda over batter and then beat well again. Then add four and coco and beat well. I love to use my kitchen aid for all of that!  Cover and place dough in fridge over night. ( I usually just do it for a hour or so and it turns out just the same)

Put powdered sugar in a bowl. Use cookie scoop to grab the dough; push a Rolo in the center and roll into a ball and then drop into the powered sugar and roll it around till covered.

Bake for 9 min.  place on a cooking rack.. ( I have learned that if you dont use enough dough the carmel will come out the bottom when placed on the rack. So I usually let mine sit on the sheet for a little while before placing them on the cooling rack.

I really hope you guys enjoy my favorite cookie! Its so so yummy!

Much love, Tonya
